It's Thanksgiving week, and when it comes to cooking turkey -- some of us are just plain "chicken!"

Christopher Kimball and his staff from the public television show America's Test Kitchen" are a reassuring source of advice for nervous cooks everywhere. Kimball is known as the bow-tie wearing founder of Cooks Illustrated magazine and the head of America's Test Kitchen.

Kimball and his crew are out with a new, and extensive cookbook, "The America's Test Kitchen Family Cookbook." It contains more than 1,200 recipes and more than 1,500 photos and cooking tips.

Kimball says the test kitchen staff prepares a version of a recipe hundreds of times before they perfect the dish. Kimball told MPR's Greta Cunningham that like anything, good cooking takes practice.
