Vegan food choices at local restaurants continue to expand as diners demand more options when it comes to menus and healthy eating.
A study by Nielsen says that almost 40 percent of Americans want to add more vegan foods to their diets and that includes meat-eaters.
Last week, Root to Rise kitchen won the 2020 Twin Cities Vegan Chef Challenge with their dish, "the Jackfruit BBQ Wingz."
