Parts of western Minnesota could see some Sunday morning fog.
Temperature trends
The Saturday high temperature at Minneapolis-St. Paul International Airport was 60 degrees. That was 5 degrees warmer than the average Oct. 21 high temp in the Twin Cities. Metro area highs will also be close to 60 degrees on Sunday.
Much of Minnesota will have Sunday highs in the 50s, with lower 60s in parts of southwestern and south-central Minnesota:

There could be some upper 40s in far northeastern Minnesota.
Monday highs reach the 60s across much of Minnesota, with 50s to the northeast:
Twin Cities metro area highs are projected to reach the mid 60s on Monday and Tuesday, followed by mid 50s Wednesday then lower 50s Thursday and Friday.
Cooler air arrives next weekend and lingers into the start of the following week. The National Weather Service Climate Prediction Center shows a strong tendency for below-normal temps from Oct. 27 through Oct. 31:
Rain chances
Parts of northeastern Minnesota and portions of Wisconsin will see scattered showers Saturday evening.
Much of Sunday looks dry. Scattered showers could move into western Minnesota late Sunday afternoon and early Sunday evening, then shower chances expand into eastern Minnesota and western Wisconsin overnight Sunday night. There could also be a few thunderstorms Sunday night. Scattered showers could linger into Monday morning in western Wisconsin.
The National Oceanic and Atmospheric Administration’s North American Mesoscale forecast model shows the potential rain pattern from 6 p.m. Sunday to 10 a.m. Monday:

Fall color report
Much of northern Minnesota is past peak for fall colors, but beautiful fall colors are on display in large portions of central and southern Minnesota.
The Minnesota Department of Natural Resources fall color report for Minnesota State Parks and Trails looks like this:
When you look at the fall color map, keep in mind that all deciduous trees are included, not just maples.
